Anything toastie-related is always epic – but this combination of Mediterranean flavours is a cracker!

2 slice of Mega-Thick Soft White Bread
2 tbsp Basil Pesto
2 slices of Mozzarella
4 slices of Salami
Olive Oil
Spread both slices of bread with one tbsp of pesto.
Top one side with 2 slices of mozzarella cheese and 4 slices of salami – then pop the other half onto the sandwich, so all the goodness is trapped inside.
Heat a frying pan to medium heat with one tbsp of olive oil, and toast your sandwich for about 2-3 minutes on each side.
Cut your toastie at a diagonal and serve with a lovely salad.
What CAN'T you put into a toastie? Shake it up with a cheddar, ham and grainy mustard combo, or a simple brie and caramelised onion chutney. Wherever your mood takes you, follow!
