Hummus + Grilled Veg Supertoasts

A fabulously fresh-tasting veggie combo – perfect for a quick feel good lunch.

Easy 15 mins Serves 2

Ingredients

  • 1 or 2 peppers, red or green
  • 6 tbsp hummus
  • 2 tbsp olive oil
  • 1 handful pine nuts
  • 1 handful watercress, roughly chopped

Method

Slice your peppers into thin strips and grill them in a pan with a touch of oil, until they’re nice and soft

For extra crunch, you can grill your bread, too – or just quickly pop two slices in the toaster.

Slather plenty of hummus onto your toast, then top with pine nuts and a drizzle of olive oil.

Finally, load it up with your pepper and watercress. Ta-da!

Instead of pepper, why not try fried onions and portobello mushrooms, grilled and sliced? And finish up any leftover hummus by topping it with paprika and dipping in a Moroccan Corn fun bun – delicious!
